Beef Pepper Rice

If you have ever travelled to Asia, you may be familiar with Pepper Lunch, a well-known fast food chain. It is the location where this rice with beef and pepper became popular. It’s very basic, consisting of sliced beef, rice, corn, green onions, and a sweet and salty sauce served hot and bubbly.

Key ingredients for beef pepper rice

Thinly sliced beef

Of course, thinly sliced beef is one of the most crucial components of this recipe. This is available in most grocery stores’ frozen or meat departments. Sliced ribeye is my favourite cut, but if you can’t find it, sirloin or brisket also works well. This is a photo of the one I bought, which weighs about a pound.

Rice for beef pepper rice

Fresh rice works well for this recipe, but day-old rice works better because it won’t become as soggy. Using day-old rice produces the best results because we will be adding sauce and, optionally, an egg, which is extra liquid. Two cups of cooked rice were used.

Corn, green onion, onion

Frozen corn kernels are available in almost every grocery store. It requires a quick soak in hot water and drain before adding the kernels to the heated pan.

Green onions give the meal a beautiful contrast in colour. Although I usually slice my green onions thinly, you can cut them slightly thicker for this recipe. Enhances flavor and crunch.

A regular yellow onion is first sautéed on a pan to extract the flavour. For this recipe, I used a single yellow onion, whole.

Butter

Butter adds flavour and facilitates a little further cooking of all the ingredients. I made my garlic bread using the homemade garlic butter I used for my previous two recipes.
